I've been cooking for well over 50 years. One of the things I've made a lot of is Banana Bread...and that's what this site is about. Unfortunately, after a long career my cooking days were slowed immensely when cancer decided to pay me a visit. My Multiple Myeloma (blood cancer) and subsequent transplant has done a couple things to me. It's caused me to be totally disabled and also taken away my employability...apparently. After three years of trying to find a part-time remote job (due to my compromised immune system) I finally decided to take my passion of cooking to the web. I've been working since I was 9 years old and have trouble functioning without a "job" of some kind. I also have trouble taking without giving something back.  In this case, I offer you my Best Banana Bread Recipes. You'll see How To Make...

Banana Bread without Walnuts

Mix well:

2 large eggs

1/3 cup oil which should be 50/50 shortening and butter (Best to melt for measurement...for this specific recipe I use about 70% butter and 30% shortening)

½ tsp salt

2 tsp baking powder

¼ tsp baking soda

1/3 cup plain yogurt or sour cream

1 tsp Honey (The honey flavor should be subtle. Note that honey can have different flavors depending on where it's from)

 

Add and mix:

2/3 cup sugar (I use all turbinado Sugar in the RawREGISTERED TRADEMARK ICON for TURBINADO SUGAR IN THE RAW to give it some depth of flavor)

3/4 tsp vanilla

2 large or 3 small bananas (should be very ripe)

 

Add and Mix:

1 ¾ cup sifted all purpose flour (219 grams) (7.7 oz)

 

Stir in:

TIME LISTED IS BASED ON GLASS PAN.

Prep bread pan with oil/butter/spray and flour. Bake at 325F (163C) deg in a convection oven...350F (176C) in a standard oven. Check periodically, but generally need at least 55min to bake when NOT using nuts. I set timer for 45min and check at that point. It normally takes 55min w/o using nuts.

NOTE:  This is called sugar free only because it uses SPLENDA.  There IS sugar naturally in the honey and some other ingriedents.

Mix well:

2 large eggs

1/3 cup plain yogurt or sour cream

1/2 Cup White Raisins

½ cup white raisins

Add and mix:

2/3 cup sugar (I use all turbinado Sugar in the RawREGISTERED TRADEMARK ICON for TURBINADO SUGAR IN THE RAW to give it some depth of flavor)

3/4 tsp vanilla

2 large or 3 small bananas (should be very ripe)


Add and Mix:

1 ¾ cup sifted all purpose flour (219 grams) (7.7 oz)

 

Stir in:

1 ½ cup chopped walnuts

3/4 tsp vanilla

2 large or 3 small bananas (should be very ripe)

 

Add and Mix:

1 ¾ cup sifted all purpose flour (219 grams) (7.7 oz)

 

Stir in:

1 cup chopped walnuts

I melt a little butter into a bowl and add approx 2-3 tsp orange zest into it. Press zest into the butter to release some of the oil from the zest. Brush onto top of bread when it's approx 75% done then finish baking.

¼ tsp baking soda

1/3 cup plain yogurt or sour cream

1 tsp Honey (Honey can be flavored differently depending on where it's from. One teaspoon is a good starting point to test what you are using)

Add and mix:

¾ to 1 cup chopped walnuts (make sure the pieces are not too large)

¼ tsp baking soda

1/3 cup plain yogurt or sour cream

1 tsp Honey (Honey can be flavored differently depending on where it's from. One teaspoon is a good starting point to test what you are using)

1 cup dried apricots (sliced in fairly thin strips lengthwise)

 

Add and mix:

2/3 cup sugar (I use all turbinado Sugar in the RawREGISTERED TRADEMARK ICON for TURBINADO SUGAR IN THE RAW to give it some depth of flavor)

3/4 tsp vanilla

2 large or 3 small bananas (should be very ripe)

1/8 tsp baking soda

ONE HALF OF: 1/3 cup plain yogurt or sour cream

1 tsp Honey (The honey flavor should be subtle. Note that honey can have different flavors depending on where it's from)

1/4 cup Pureed Apple

1/8 tsp Cinnamon

Add and mix:

1/3 cup sugar (Turbinado sugar in the rawREGISTERED TRADEMARK ICON for TURBINADO SUGAR IN THE RAW)

3/4 tsp vanilla

2 small bananas (should be very ripe)

 

Add and Mix:

1 cup sifted all purpose flour

 

Stir in:

¼ Cup crushed peanuts
